
Savoury Oat and Chicken Bake
Products:
3 cans of Compass chicken in its own sauce
8 eggs
150 g yogurt
200 g grated mozzarella or yellow cheese
1 large red bell pepper
1 large green bell pepper
1 leek
A handful of fresh parsley
A handful of fresh basil
200 g fine oats
2–3 tbsp olive oil
Salt & pepper
Method of preparation:
1. In a big bowl, whisk the eggs lightly with the yogurt. Add the grated cheese, finely chopped peppers, leek, parsley, and basil. Season with salt and pepper, give it all a good stir, then fold in the oats.
2. Pour the mixture into a large baking dish, drizzle with a touch of olive oil, and bake in a preheated oven at 180°C for about 35 minutes — until golden and set.
