
Roast pork with vegetables
Ingredients:
3-4 tablespoons of olive oil
4-5 scrubbed carrots
2 large peeled and diced potatoes
A few whole cloves of garlic
1 large onion cut into quarters or halves
1 sprig of rosemary
Fresh thyme
Salt and pepper
2 Compass pork in natural sauce cans
Directions:
1. Grease a baking pan and heat the oven to 200°C.
2. Put the chopped potatoes, carrots, onions and garlic in the pan. Sprinkle with salt, pepper, thyme and olive oil and mix well.
*** You can also add other vegetables of choice – celery, sweet potatoes, fennel, turnips, mushrooms, etc.
3. Add a sprig of rosemary, wrap with foil and roast in a preheated oven for 40 minutes.
4. Remove the pan from the oven. Add the meat and put the pan (uncovered) back in the oven for 10 minutes.
5. Serve warm.
